Health

Federal health inspectors from the Centers for Disease Control and Prevention inspect cruise ships twice a year, checking everything from kitchen equipment to dishwasher temperatures, and grade ships based on what they find. A score below 86 is considered failing. Cruise ships are also required to report all illness outbreaks affecting more than 3% of passengers or crew to the CDC. Inspections and outbreaks from 2010 to the present are shown below.

Galley-Deck 6 Potwash

There was a seam where the pulper unit met the underside of the counter. A work order was submitted.

Food Service General-Decks

There were many areas in the galleys with missing and recessed deck grout. This was written on the previous inspection. The vessel had replaced approximately 1000 deck tiles since the previous inspection, and no cracked or broken tiles were observed.

Galley-Deck 6 Hot Foods Time Control Plan

The time control plan for this area stated that hot holding cabinets were on time control. The individual cabinets were labeled for time control, but they were not listed on the plan. This was corrected.

Galley-Deck 6 Bains Marie Service Line

There was condensate on the underside of the shelf directly above the bains marie containing pancakes and other breakfast items. The steam on the bains marie was turned down. No food was impacted.

Galley-Deck 6 Cold Larder

There was a leak from the prerinse spray hose in the dirty area. A work order was submitted.

Food Service General-Light Intensity

The light intensity around and behind deck- and counter-mounted equipment was less than 110 lux in several areas, including: main galley deck 6 pastry stack ovens; main galley deck 6 ice machines and water dispenser (across from dishwash area); main galley deck 5 cold larder ice machine; main galley deck 5 ice machines (across from dishwash area); crew mess ice machine; crew mess beverage stations; crew bar pantry ice machine and counter-mounted ice dispenser; Plaza buffet toaster; deck pantry ice machines; Jardin coffee machine; Tiffany's bar pantry ice machine and Bunn coffee machine; Explorers bar pantry ice machine; dispense bar pantry ice machine; and Yacht and Compass bar pantry ice machine.

Galley-Deck 6 Pastry

There were no wash or final rinse times on the undercounter warewash machine data plate. This was corrected.

Dining Room-Main Restaurant Menu Consumer Advisory

The dinner menu did not include an asterisk by the gravlax, which was made with cold smoked salmon. The breakfast menu did not include a consumer advisory.

Galley-Deck 5 Bakery

There were no wash or final rinse times on the undercounter warewash machine data plate. This was corrected.

Galley-Deck 5 Potwash

There was condensate on the deckhead vent above the final sanitizing rinse sink, and condensate was dripping into the sink. Hot water was being used for sanitizing, and the temperature of the water was 208 °F. The temperature was turned down and the crew member in this area was advised to add cold water to the sink to lower the temperature further. No clean items were impacted.

Galley-Deck 5

The reach-in blast chiller near the bakery had been out of order since 15 December 2012. Parts had been ordered, and there was another blast chiller in the galley.

Galley-Deck 5 Pastry Service Station

Along the bottom and lower sides of the doors for the three undercounter refrigerator units, there were gaps where the doors met the units. It appeared that the magnets at the top of the doors were very strong, possibly pulling on the top of the doors and creating the gaps. The temperatures of the food and the units were all below 41 °F. A work order was submitted.

Galley-Deck 5 Cold Larder

The undercounter blast chiller had been out of order for approximately 15 days. A work order had been submitted, and there was a reach-in blast chiller in the galley.

Bar-Wardroom

There was no coving at most of the deck/bulkhead junctures or at the front counter/deck juncture in this area. There was also a piece of wood on the bulkhead that was damaged where it met the deck, exposing raw, absorbent wood. A work order was submitted.

Preparation Room-Fish Defrost

Liquid was dripping from the deckhead vent to the deck. No food was impacted. A work order was submitted.

Provisions-Herring Parasite Destruction Letters

There were no parasite destruction letters for the various types of herring served on board. The herring was served raw or undercooked. According to the staff, the public health personnel were working with the vendor on obtaining the letters.

Galley-Plaza

Liquid was dripping from a deckhead panel across from the tilting pans. A work order was submitted.

Bar-Explorers

There was a small step stool made with raw, absorbent wood.

Galley-Potwash Areas

The potwash machines were out of order in the deck 5 and 6 main galleys and Plaza (lido) galley. The machine in the deck 5 main galley had been out of order since 15 August 2011. Parts had been ordered and were expected on 10 February 2012. The machine in the deck 6 main galley had been out of order since 30 January 2012. A work order had been submitted. The machine in the Plaza galley had been out of order since 22 January 2011. A work order had been submitted and parts were on order. According to the staff, large items that would not fit in the three-compartment sinks were washed, rinsed, and sanitized with a clean-in-place system.

Medical-Acute Gastroenteritis (AGE) Surveillance Logs

The information in the AGE surveillance logs was not in the exact order specified in Annex 13.2.2.

Potable Water-Far Point Halogen Analyzer

The far point halogen analyzer was out of calibration by more than 0.6 ppm. The measurements using the inspector's calibrated test kit were 1.6, 1.57, and 1.51 ppm. The analyzer readings were 0.98, 1.0, and 0.98 ppm. The free chlorine reagent tablets used by the ship were discolored. The ship's staff changed to a new reagent supply and measured 1.40 ppm while the inspector measured 1.54 ppm. The analyzer was calibrated.

Potable Water-Microbiological Sampling

The records showed that the deck 11 pantry was sampled as a part of the monthly distribution system monitoring in both November and December.

Recreational Water Facilities-Antientrapment Drains

The swimming pool had multiple gravity drains greater than 3 feet apart, but the covers were not certified for antientrapment and there were no alarms. The whirlpools had blockable gravity drains and it was not clear if the covers were certified for antientrapment.

Recreational Water Facilities-Automatic Monitoring

The sampling lines for the halogen analyzers were not installed on the return lines from the RWFs. According to the staff, the sampling lines will be relocated during dry dock.

Recreational Water Facilities-Rivera Pool

The water level in the lower Rivera pool was about 8 inches above the gutter system and lower than the overflowing beach mode. Lint and hair were floating on the water surface at the end of the pool.

Serious crimes and injuries on cruise ships that make port in the U.S. are required to be reported to the Coast Guard. Smaller-scale crimes and thefts are reported to local police authorities (if reported at all). Incidents and inspections from 2010 to the present are shown below.
